Squashes and Pumpkins and Gourds, Oh my!

So October is almost here (3 hours), and since it is my favorite month I am super excited. I plan on cramming all my favorite fall activities into one month. Here's a list of what I plan to do:
1. go to King Richard's Faire
2. go apple picking
3. make apple crisp
4. carve a pumpkin
5. go to a Halloween party (invitations anyone?)

Also, I'd like to add that I have completed one week of no dairy and no meat! My doctor told me to lose weight (uhg) and I have a family history of high cholesterol so I knew I had to do something. Dieting never works and I just can't force myself to exercise regularly enough, so I decided to go back to being a full-on vegetarian and also give up dairy. I can't say I'm going vegan because I'm still eating eggs... but almost vegan. I think meat and dairy have too much fat and cholesterol and it's really easy to get the nutrients they offer in other foods or supplements (like vitamins B and D, calcium, protein, and iron). So, we'll see how this goes. So far I don't feel much different except maybe less bloated.

I have some butternut squashes in the fridge that I've been itching to cook. Not sure if a should bake them with brown sugar or make a soup. Either way they'll be yummy! My friend Emily gave me a good recommendation today for a vegan blog. It's Oh She Glows. Check it out!
